There are times after a long day in the field when all you want is a home-style meal. This recipe brings the taste of a family meal without all the fuss and drama. A former SAWS trail crew leader shared this recipe with me a couple of years ago and it has become a staple in my backcountry arsenal. The ingredients can easily be incorporated into other dishes or just eaten all up in one sitting. Make sure to plan for a post-meal nap under the trees.

3 cups water

2 cups instant potatoes

2 cups stove top stuffing

1 package instant gravy, your choice or type

1 cup dried cranberries

1 package chicken, shelf-stable

Optional Ingredients

Dried mushrooms for extra flavor

Any assortment of vegetables you have available. Fresh, freeze-dried, or dehydrated

Replace the chicken with tofu or textured vegetable protein

Cooking Instructions

  1. Bring the 3 cups of water to a boil.

  2. In a separate container add gravy mix and ½ cup of the 3 cups of water. Set aside.

  3. In the pot with the remaining 2 & ½ cups of water, add the instant potatoes and Stove Top dressing and simmer for 5 minutes.

  4. Add chicken and dried cranberries cover and let sit for 5 minutes

  5. Pour the gravy on top of potato, dressing, chicken mixture.

  6. Dig in and enjoy!
